Let the Root Cellaring Begin!

Today I started getting the roots in the root cellar.  Previously it was getting juice and tomatoes in jars and getting jars organized.  Yesterday I moved the barrels into the root cellar and some sand.

Today I buried the large beets Ken has dug so far, and then the carrots.  We have tried many different storage techniques, but damp sand in a cool place seems to keep the roots at their best.
