Garlic Scapes

What are garlic scapes?  About this time each growing season, garlic plants send up a scape or seed head.  the scape can be left to grow in size or promptly removed.  If removed promptly the plant puts its energy into growing larger garlic bulbs. 

The scapes are great chopped and used wherever you would use garlic - salad dressings, etc.  We love this tasty preview of great garlic flavor.
